In field guides and in this web site, a compound fruiting body is one that has more than one cap and stalk, as in the image. A simple fruiting body is one that only has one cap.
     

an obsolete technical sense


In some older works, a compound body is one that has more than one part, for example a cap and a stem. This usage has died out, as it makes it hard to find a fruiting body that isn't compound.
